The Sparrow framework isn't installed by any means. Alternatively, you can remove Sparrow framework files from your disk drive by deleting the entire Sparrow directory. But I assume you knew that.
I don't have Xcode 6.1, but I believe it's similar to Xcode 6.0. You can remove the source tree variable by clicking on:
Xcode menu > preferences... > Locations tab > Source Trees sub-tab > select the SPARROW_SRC variable and click the "-" button.
I believe Xcode 5.0+ doesn't allow direct documentation management, so give the following application a try:

Alternatively, you can delete the Sparrow documentation by finding it via Finder and deleting the item. I am just guessing that it could be in one of the following locations:
/Applications/Xcode.app/Contents/Developer/Documentation/DocSets
/Library/Developer/Shared/Documentation/DocSets
